INGREDIENTS

  • 7 roasted or steamed sweet potatoes

  • 1/3 cup plain flour of your choice - I used a mix of rice flour + coconut but you can use corn flour as well

  • 1/3 cup plant-based milk - I used a mix of rice + hazelnut milk

  • 2 pasture raised eggs or 2tbsp of chia seeds soaked 5-10 min in 6tbsp of filtered water

  • 1/4 tsp turmeric

  • 1 tbsp MCT oil ( or basic coconut oil)

  • 3 good pinches of sea salt

  • 1 tsp cinnamon (optional)

  • TOPPING: Bee pollen, Manuka honey and fresh seasonal fruits of your choice


PREPARATION

  1. Mix all these ingredients together

  2. Add 2-3 tbsp of the mixture in a hot pan

  3. Leave it enough time on both side to cook perfectly inside the pancake 🥞  

  4. Add Toppings of your choice - I used bee pollen 🐝 Sliced banana and hazelnut but you can use blueberries, raspberries, grounded almond, honey or even salty food: fried egg with pancetta or honey-roasted ham it’s delicious.
