INGREDIENTS

  • 3 bananas (ripe)

  • 1⁄2 cup of gluten-free flour

  • 1 cup almond powder (freshly grounded)

  • 4 tbsp coconut oil

  • 2 large eggs (or 2 tbsp chia seeds soaked 10 min in 8 tbsp of filtered water)* (see tips below)

  • 1 glass of almond milk (or milk of your choice)

  • 1⁄2 cup of stevia (or raw Manuka honey)

  • 2 tbsp of cocoa powder (or 15 g of dark chocolate (85% cocoa minimum))

  • 3 tsp yeast (or 2 tsp baking powder + 2 tsp baking soda)

  • 1 tsp of vanilla extract

  • 1 pinch of salt


PREPARATION

  1. Preheat oven at 175 °C.


  2. Mash 2 bananas in a large bowl

  3. Add in this order coconut oil, eggs/chia eggs, stevia/honey, almond powder/grounded, cocoa powder/dark chocolate, milk, vanilla extract and yeast/baking powder/soda

  4. Add progressively flour to the mixture and mix gently until smooth

  5. Poor the mixture in your cake tin

  6. Cut the last banana in slices and add them to the top of the cake

  7. Cook in the oven for 30 min ...

  8. et Voilà!

* MY LITTLE TIPS’

  • If you chose to cook the vegan version (no egg but chia seeds) the cake may be thicker. I would advise you to add 1 glass of almond milk to make the mixture a bit smoother.
